Happiness is Spring Break!  I had a little surgery last year during spring break, and it took me out of commission for six weeks.  I am so excited to make up for that lost time this year because whether it is a quite week at home, a vacation, or several little trips to fun places, Spring Break absolutely rocks! Lemon Cream Cheese Pancakes with Lemon Glaze

Lemon Cream Cheese Pancakes with Lemon Glaze

Ingredients

For the Pancakes

3/4 cup buttermilk

3 tablespoons butter

1 teaspoon vanilla

1 egg, slightly beaten

1/4 cup sugar

2 ounces cream cheese

2 tablespoons fresh lemon juice

1 1/4 cup flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

For the Glaze

4 ounces cream cheese

2 tablespoons fresh lemon juice

1/4 cup sugar

2 tablespoons whipping cream

2 tablespoons milk

Instructions

    Preparing the Pancake Batter
  1. Add the butter to a large mixing bowl, and melt it in the microwave for about 30 seconds.
  2. Remove it from the microwave, and add the egg and vanilla.
  3. Slowly whisk in the buttermilk.
  4. Break up the cream cheese, and mix it in with the lemon juice. There will be small chunks of cream cheese in the pancakes, and that is perfect.
  5. In a separate bowl, mix together the sugar, flour, baking powder, baking soda, and salt.
  6. Add the flour mixture to the buttermilk mixture, and stir to combine.
  7. Preparing the Glaze
  8. In a mixer, mix together the cream cheese and lemon juice.
  9. Add the sugar, and continue to mix together until smooth.
  10. Pour in the whipping cream and milk, mixing together until creamy.
  11. If the glaze is not pourable at this point, add more milk until it is.
  12. Cooking the Pancakes
  13. Preheat the griddle to 375.
  14. Using a small ladle, add about 1/4 cup of the pancake mixture to the griddle, one scoop at a time. I usually cook about 6 at a time on my griddle.
  15. Cook for about 3-4 minutes, until it starts to bubble a little, and then flip.
  16. Cook on that side for about 2-3 minutes, and then move from the griddle to a plate.
  17. Continue until all of the mixture has been used. This recipe makes about 10-12 medium-sized pancakes.
  18. Putting it All Together
  19. Place pancakes on a plate.
  20. Add up to three pancakes to create a small stack.
  21. Pour the glaze onto the top of the stack, allowing it to run down the sides.

As I was looking through old blog posts last week, I realized that I have a lot of pancake recipes.  And, there is a reason for that.

Pancakes are good, easy, delicious, and perfect for breakfast, lunch, or dinner.

And, they are so versatile.  I use the same basic pancake recipe to create so many different combination of flavors.

If you give this momma a pancake, she just might ask for some milk, clean the refrigerator, remember to run to the grocery store, buy something pretty, return home to a messy house, look at the table, sit down, and have another pancake.

After writing this post, I stored it because I was not sure when to share it.  Then, I saw this written by Maria over at Two Peas & Their Pod.  Her pictures are gorgeous, her pancakes are delicious, and she explains why today is a perfect day to enjoy some pancakes.  I will give you a little hint…it has something to do with Fat Tuesday.

Pancakes are just good for the soul.  As proof of that, I made Maria’s Cinnamon Streusel Pancakes for breakfast, and, consequently, I have been smiling all day.  Yes, they are that good.

Happiness is a rainy day at home with my littles.  Gabriel  and Ethan are both home from school because they both still had fever last night.  But, they are feeling better this morning.  A lazy, restful day at home is just what the doctor…and the momma…ordered.

Happiness is pancakes.  We love pancakes, and they are just as good for dinner as they are for breakfast.  After a crazy afternoon of appointments yesterday, I did not know what to make for dinner.  Breakfast for dinner immediately came to mind.  Pancakes are always delicious, and deciding to make strawberry chocolate chip ones was the maybe the best decision that I made all day.  Make these pancakes for breakfast this weekend because they are sure to make your mouth very, very happy.

Strawberry Chocolate Chip Pancakes

Strawberry Chocolate Chip Pancakes

Ingredients

Strawberries, diced

3/4 cups chocolate chips

Instructions

  1. Preheat the griddle to 375.
  2. Add the vinegar to the milk and set aside. This will create buttermilk. If you prefer to just use buttermilk, you can do that, too.
  3. Add the butter to a large mixing bowl, and melt it in the microwave for about 30 seconds.
