Happiness is Spring Break!  I had a little surgery last year during spring break, and it took me out of commission for six weeks.  I am so excited to make up for that lost time this year because whether it is a quite week at home, a vacation, or several little trips to fun places, Spring Break absolutely rocks! Lemon Cream Cheese Pancakes with Lemon Glaze

Lemon Cream Cheese Pancakes with Lemon Glaze

Ingredients

For the Pancakes

3/4 cup buttermilk

3 tablespoons butter

1 teaspoon vanilla

1 egg, slightly beaten

1/4 cup sugar

2 ounces cream cheese

2 tablespoons fresh lemon juice

1 1/4 cup flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

For the Glaze

4 ounces cream cheese

2 tablespoons fresh lemon juice

1/4 cup sugar

2 tablespoons whipping cream

2 tablespoons milk

Instructions

    Preparing the Pancake Batter
  1. Add the butter to a large mixing bowl, and melt it in the microwave for about 30 seconds.
  2. Remove it from the microwave, and add the egg and vanilla.
  3. Slowly whisk in the buttermilk.
  4. Break up the cream cheese, and mix it in with the lemon juice. There will be small chunks of cream cheese in the pancakes, and that is perfect.
  5. In a separate bowl, mix together the sugar, flour, baking powder, baking soda, and salt.
  6. Add the flour mixture to the buttermilk mixture, and stir to combine.
  7. Preparing the Glaze
  8. In a mixer, mix together the cream cheese and lemon juice.
  9. Add the sugar, and continue to mix together until smooth.
  10. Pour in the whipping cream and milk, mixing together until creamy.
  11. If the glaze is not pourable at this point, add more milk until it is.
  12. Cooking the Pancakes
  13. Preheat the griddle to 375.
  14. Using a small ladle, add about 1/4 cup of the pancake mixture to the griddle, one scoop at a time. I usually cook about 6 at a time on my griddle.
  15. Cook for about 3-4 minutes, until it starts to bubble a little, and then flip.
  16. Cook on that side for about 2-3 minutes, and then move from the griddle to a plate.
  17. Continue until all of the mixture has been used. This recipe makes about 10-12 medium-sized pancakes.
  18. Putting it All Together
  19. Place pancakes on a plate.
  20. Add up to three pancakes to create a small stack.
  21. Pour the glaze onto the top of the stack, allowing it to run down the sides.

Happiness Is…Recipe: Strawberry Cream Cheese Pie

Happiness is birthday celebrations.  One last night, one this Sunday, and another one next Sunday.

Happiness is a weekend of working in the yard, soccer, birthday parties, and family in town.

Happiness is this delicious Strawberry Cream Cheese Pie. I am not sure where the recipe originated because we have been making a version of it since I was a child.  We typically used canned pie filling, but I forgot to buy it at the store.  So, I made my own strawberry filling this time.  And, it turned out just as great.  One bite of this pie is pure happiness, especially when the pie is the dessert to celebrate a special birthday.

Mini Strawberry Cream Cheese Pie

Ingredients

Cream Cheese Filling

1 14 ounce can sweetened condensed milk

1 package cream cheese

1 teaspoon vanilla

1/2 cup fresh lemon juice

Strawberry Glaze

1/2 cup strawberries, chopped

1/4 cup sugar

1/2 cup

1 tablespoon cornstarch

1 tablespoon water

Crust

Pepperidge Farm Coconut Cookies

Instructions

    Preparing the Cream Cheese Filling
  1. Add the cream cheese and condensed milk to the mixer. Blend until smooth.
  2. Pour in the vanilla.
  3. Slowly mix in the lemon juice.
  4. Continue to mix until smooth and combined.
  5. Strawberry Glaze
  6. Add the strawberries, sugar, and 1/2 cup water to a saucepan.
  7. Cook over medium high heat for 10-15 minutes.
  8. Reduce heat to medium low.
  9. Mix together the cornstarch and water.
  10. Slowly add to the strawberry mixture, stirring quickly as it thickens.
  11. Immediately remove from heat.
  12. Refrigerate.
  13. Putting It All Together
  14. Place cupcake liners in muffin pan.
  15. Place a cookie on the bottom of the liner.
  16. Add a scoop of the cream cheese filling.
  17. Repeat with all 12 liners.
  18. Refrigerate for at least 2 hours.
  19. Before serving, add the strawberry glaze to the top.

Winter-Spring Days – Recipe: Strawberry Cream Cheese French Toast

We have been having spring-like weather here in Texas.  And, the littles have been loving every minute of it.

We all spent most of the day outside on Saturday.

For Sean and I, there was a lot of yard work involved, raking up the fall leaves before the spring ones decide to fall.

For the littles, there was a lot of playing and jumping into leaf piles.

At first, my instinct was to not let them jump in the piles and spread the leaves that I had just raked.

I am so happy that I changed my mind.

And, the looks on their faces was just priceless.

A simple afternoon of raking leaves created such sweet memories.

Raking leaves is hard work, so I am so glad that I had the laughter and smiles of my littles to keep me motivated to finish the job at hand.  And, I was also happy that we started the day with this mid-morning breakfast.  I used the sour dough bread that my wonderfully talented mother made and created a cream cheese topping, strawberry sauce, and homemade whipped cream.  It was absolutely perfect for a Winter-Spring day.  And, since it is red and white, it would be lovely for a special Valentine’s Day breakfast, too.

Strawberry Cream Cheese French Toast

Strawberry Cream Cheese French Toast

Ingredients

French Toast

6 slices of sour dough bread or your favorite French toast bread

2 eggs

2 tablespoons milk

1 teaspoon vanilla

1 teaspoon ground cinnamon

4 tablespoons butter

Cream Cheese Spread

1 package cream cheese

1/4 cup sugar

Strawberry Sauce

1 cup strawberries, diced

1 cup water

1/4 cup sugar

Whipped Cream

1 pint heavy whipping cream

1/4 cup sugar

1 teaspoon vanilla

Instructions

    Preparing the French Toast
  1. Whisk together the eggs, milk, vanilla, and ground cinnamon.
  2. Dip the bread into the egg mixture, making sure to coat each side.
  3. Melt butter in large cooking pan over medium high heat.
  4. Add the bread to the pan, cooking for about 3-4 minutes on each side.
  5. Remove from the pan and place on a serving plate.
  6. Preparing the Cream Cheese Spread
  7. Add the cream cheese and sugar to a mixing bowl.
  8. Whip together for about 2-3 minutes.
  9. Remove from the mixing bowl and place in a serving bowl.
  10. Preparing the Strawberry Sauce
  11. Add the strawberries, water, and sugar to a small saucepan.
  12. Cook over medium high heat for about 10 minutes.
  13. Reduce heat to low until ready to serve.
  14. Preparing the Whipped Cream
  15. Add the whipped cream to a bowl, and start whipping with an electric mixer.
  16. Gradually add the sugar and vanilla, and continue to whip for about 10-15 minutes, until fluffy peaks begin to form.
  17. Putting it All Together
  18. Place one slice of French Toast on each plate
  19. Spread a layer of cream cheese spread on one side of each slice of toast.
  20. Drizzle the strawberry sauce over the top.
  21. Add a scoop of whipped cream.
