Summer Fun: Make Ice Cream Sandwiches – Recipe: Chocolate Fudge Cookie Ice Cream Sandwich

As I was looking through our Summer Fun List on Sunday, determining what all I wanted to do with the littles this week, I realized that we had not made ice cream sandwiches yet. I am not sure how I could have missed anything food-related, but I was certain that I would remedy that as soon as possible.

Monday afternoon I went to work creating what I hoped would be a delicious dessert for our family.

The pictures do not do this fantastic, kid-friendly dessert justice at all.  I was in a bit of a hurry to get them put together so that they would be ready after dinner, so I did not take the time to roll them in cute little sprinkles or anything.

But, I am here to tell you that looks can be so deceiving.

Because, these ice cream sandwiches were really delicious.

The chocolate fudge cookie combined with the homemade vanilla ice cream created a perfect summer treat.

Chocolate Fudge Cookie Ice Cream Sandwich

Chocolate Fudge Cookie Ice Cream Sandwich

Ingredients

Vanilla Ice Cream

1 pint whipping cream

2 teaspoons vanilla

1 cup sugar

1 can sweetened, condensed milk

3 eggs

1 cup whole milk

Chocolate Fudge Cookies

2/3 cups granulated sugar

1/3 cup brown sugar

5 tablespoons butter

1 egg

1 teaspoon vanilla

7 tablespoons cocoa powder

1 cup all-purpose flour

1/4 teaspoon baking soda

1/8 teaspoon salt

Instructions

    Preparing the Vanilla Ice Cream
  1. Blend together the whipping cream, vanilla, sweetened condensed milk, sugar, and eggs.
  2. Pour it into the container of your ice cream freezer.
  3. Add 1-2 cups whole milk to finish filling the freezer (adjust according to the size of your freezer).
  4. Freeze according to the manufacturer instructions. Mine usually takes about 30-45 minutes.
  5. Remove from container and store in the freezer until ready to use.
  6. Preparing the Chocolate Fudge Cookies
  7. Preheat oven to 350.
  8. Prepare baking sheet by lining it with parchment paper.
  9. Combine butter, sugar, and brown sugar.
  10. Add egg and vanilla, and mix until combined.
  11. In a separate bowl, mix together the cocoa powder, flour, baking soda, and salt.
  12. Add the flour mixture to the peanut butter mixture until just combined.
  13. Using a small cookie scoop, scoop out a ball of chocolate fudge dough.
  14. Place on the cookie sheet, and then flatten with the palm of your hand.
  15. Repeat with the remaining dough, which should make about 12-14 cookies.
  16. Bake for 10-12 minutes.
  17. Remove from oven, and allow to cool for 2-3 minutes before moving to a wire rack.
  18. Cool completely before creating the ice cream sandwiches.
  19. Preparing the Ice Cream Sandwiches
  20. Flip over one cookie so that the flat side is on top.
  21. Take a small scoop of slightly softened ice cream, and place it on top of the cookie.
  22. Top the ice cream with the flat bottom of another cookie.
  23. Slightly press everything together.
  24. Repeat to make a total of 6-7 ice cream sandwiches.
  25. Place in the freezer until ready to enjoy.

Happiness Is…Recipe: Chocolate Fudge Peanut Butter Cookies

Happiness is summer break.  I love the freedom, the fun, and the absolute joy of it all.  I am holding on very tight to every single second of it.

Happiness is truly enjoying my family.  I have loved having such an intentional summer, filled with baking, swimming, fishing, trips to the park, movies, and fun.

Happiness is celebrations, both big and small.  One of the things that I love about celebrations is the extra time that I get to spend with my family.  The other thing that I love is planning the perfect, fun, celebratory menu, making sure that there is a little bit of something for everyone.

Happiness is watching Ethan’s language unfold.  The steps are small, sometimes even smaller than baby steps. But, when we step back and reflect on where he was and where he is now, we can definitely see that some of the steps were bigger than we thought.

Happiness is walking with my big sister.  We try to walk three miles each morning.  I enjoy getting up early to start my day with some exercise, and I love the chats that we have while we are walking.

Happiness is cookies.  I have mentioned before that we are making different cookies each week of summer break. I typically make them mid-week, but this week, I was craving cookies on Sunday.  Specifically, I was craving chocolate and peanut butter cookies.  I started thinking about how I could stuff peanut butter filling inside of my chocolate fudge cookies.  I finally decided to make my peanut butter cookie dough and stuff that inside. Sean declared them the best cookies that I have ever made.  They were delicious.  If you like chocolate and peanut butter, these cookies will make you very happy.

Chocolate Fudge Peanut Butter Cookies

Ingredients

For the Peanut Butter Cookies

1/2 cup butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1/2 cup creamy peanut butter

1/2 teaspoon vanilla

1 1/4 cups flour

3/4 teaspoon baking soda

1/2 teaspoon salt

For the Chocolate Fudge Cookies

2/3 cups granulated sugar

1/3 cup brown sugar

5 tablespoons butter

1 egg

1 teaspoon vanilla

7 tablespoons cocoa powder

1 cup all-purpose flour

1/4 teaspoon baking soda

1/8 teaspoon salt

  3. Scoop in peanut butter, and continue to mix.
  4. In a separate bowl, mix together the flour, baking soda, and salt.
  5. Add the flour mixture to the peanut butter mixture until just combined.
  6. Preparing the Chocolate Fudge Cookie Dough
  7. Combine butter, sugar, and brown sugar.
  8. Add egg and vanilla, and mix until combined.
  9. In a separate bowl, mix together the cocoa powder, flour, baking soda, and salt.
  10. Add the flour mixture to the peanut butter mixture until just combined.
  11. Preparing the Cookies
  12. Preheat oven to 350.
  13. Prepare baking sheet by lining it with parchment paper.
  14. Roll about 1 tablespoon of the peanut butter cookie dough into a ball.
  15. Using a cookie scoop, scoop out a ball of chocolate fudge dough.
  16. Press a hole into the center of the chocolate fudge dough, and add the peanut butter dough to it.
  17. Form a ball of chocolate fudge dough around the peanut butter cookie dough.
  18. Repeat until you have enough cookies to fit on your baking sheet.
  19. Bake for 10-12 minutes.
  20. Remove from oven, and allow to cool for 2-3 minutes before moving to a wire rack.

Summer Fun: Making Popsicles – Recipe: Chocolate and Vanilla Pudding Pops

On Wednesday, when we had our pajama day, I decided that popsicles were in order.

Since Gabriel and Summer both had coughs, I hoped that the pudding pops would be soothing on their throats.  We were preparing to go out of town, so I did not have much fresh fruit on hand.  I looked in the pantry and found chocolate and vanilla pudding, and I knew that it would be perfect for pops.

Ingredients

1 small box instant chocolate pudding mix

1 small box instant vanilla pudding mix

4 cups milk

Instructions

  1. In one bowl add the chocolate pudding mix.
  2. In a separate bowl, add the vanilla pudding mix.
  3. Pour 2 cups of milk into each of the bowls.
  4. Whisk both separate bowls of pudding mix.
  5. Pour half chocolate and half vanilla into each of the popsicle molds.
  6. Continue with all of the popsicle molds.
  7. Freeze for 3-4 hours.
