Summer Fun: Eat Spaghetti and Meatballs while Watching Lady and the Tramp – Recipe: Spaghetti and Meatballs

One of the things that I saw on someone else’s (sorry, I cannot remember whose!) summer fun list was to watch Lady and the Tramp while eating spaghetti and meatballs.  What a great idea!  Given how much we love pizza and movie night, I new that adapting it to movie and spaghetti and meatballs night would be perfect. So, on Monday, that is exactly what we did.

We ate the spaghetti and meatballs picnic style on the floor, while watching a truly adorable movie. Everyone loved it.

It was a perfect way to begin another summer fun week.

Spaghetti and Meatballs

Spaghetti and Meatballs

Ingredients

Meatballs

2 pounds ground beef

1 egg

1 cup bread crumbs

1/2 cup parmesan cheese

1 teaspoon salt

1 teaspoon ground pepper

1 teaspoon onion powder

2 teaspoons Italian seasoning

1 tablespoon olive oil

Sauce

28 ounce can tomato sauce

6 ounce can tomato paste

2 gloves garlic, minced

1 teaspoon salt (or more, to taste)

1 teaspoon pepper (or more, to taste)

2 teaspoons Italian seasoning

1 teaspoon sugar

1 teaspoon onion powder

*Note - adjust seasoning according to taste preference

Instructions

    Meatballs
  1. Add the hamburger meat to a large bowl.
  2. Pour in the eggs, bread crumbs, parmesan cheese, and all seasonings.
  3. Using your clean hands or a spoon, mix together.
  4. Form into 2 inch balls.
  5. Add olive oil to a large cooking pan, and heat over medium to medium high heat.
  6. Once the burner is hot, add the meatballs to the pan.
  7. Cook for about 5 minutes, and then turn.
  8. Cook for another 5 minutes or until no longer pink. *Note - the cooking time might be more or less, depending on your stove, how comfortable you are with the cooking time of your beef, etc.
  9. Sauce
  10. Leave the meatballs in the pan and reduce the heat to medium low.
  11. Add the tomato sauce and tomato paste to the pan and mix it together.
  12. Add the garlic and all of the seasonings.
  13. Cook over low heat for at least 15 minutes.
  14. Serve over cooked spaghetti.

Cooking for My Kids: Project Lunchbox – Recipe: Garlic Bread Cubes with Pizza Sauce

It has been a great week to cook for my kids while participating in project lunchbox.  While I almost always pack lunches for the littles, this week has given me a new perspective on it as I looked for new, healthy, more exciting things to pack.

PhotobucketFor this lunch, I packed garlic bread cubes, pizza sauce, pepperonis, pineapple, grapes, and apple slices.  It took minutes to put it all together, and I knew that the boys would enjoy every bite.

There is nothing spectacular about any of the lunches.  Most of them are just made by putting together a little bit of leftovers with some fruit and vegetables.  What has made them special is the extra little effort of coming up with something new, different, and fun for them.  Because, as much as the school year wears on me, it does the same thing to them.  We need to encourage each other.  And, sometimes something as simple as a fun lunch is all the encouragement that they need.

Garlic Bread Cubes with Pizza Sauce

Garlic Bread Cubes with Pizza Sauce

Ingredients

For the Garlic Bread Cubes

Pizza crust

Butter

Garlic salt

For the Pizza Sauce

1 tablespoon olive oil

2 cloves garlic, minced

1 8 ounce can tomato sauce

1 6 ounce can tomato paste

1 teaspoon onion powder

1/2 teaspoon sugar

1 teaspoon Italian seasoning

Instructions

    Preparing the Garlic Bread
  1. Preheat oven to 450.
  2. Spray a baking sheet with cooking spray.
  3. Using your hands, spread out the pizza dough into a rectangle, making sure to leave it thick and fluffy. You do not want to roll it flat like a pizza.
  4. Spread butter on the dough, and then sprinkle it with garlic salt.
  5. Place in the oven and bake for 10-15 minutes.
  6. Remove from oven and cut into slices. Then, cut those slices into cubes.
  7. Preparing the Pizza Sauce
  8. Pour the olive oil into a small pan, and heat over medium heat.
  9. Add the minced garlic, and saute for 1-2 minutes.
  10. Reduce the heat slightly and add the tomato sauce, tomato paste, onion powder, sugar, and Italian seasoning.
  11. Cook for at least 15 minutes. Taste and adjust seasoning according to your taste preference.
  12. Serving
  13. Serve the garlic bread cubes with the pizza sauce for dipping.

Early Release – Recipe: Meat Lover’s Stromboli

Today is an early release day at school, which means that it is almost like a day off, minus the fact that we still had to get up early.  But, we do get to pick up the boys at noon and have the entire afternoon to eat, play, and relax.

I think that we will enjoy the beautiful day outside, have a yummy snack, and play soccer.

To finish off the day, we just might have this Meat Lover’s Stromboli.  Several weeks ago, I shared this BBQ Chicken Stromboli.   We could not decide which one we liked best.  They are both delicious and perfect after a relaxing, fun day at home.

Meat Lover’s Stromboli

Meat Lover’s Stromboli

Ingredients

Stromboli Crust

1 cup warm water

1/2 cup warm milk

1 teaspoon active dry yeast

1 teaspoon sugar

1 teaspoon salt

4 cups flour

1/3 cup olive oil

Stromboli Stuffing

1/4 pound hamburger meat, browned

Pepperonis

Pizza sauce

Pizza cheese

Stromboli Topping

1/4 cup melted butter

Kosher salt

Instructions

    Preparing the Dough
  1. Sprinkle yeast over the warm water and milk mixture.
  2. Allow to sit for about 5-10 minutes.
  3. Add the salt, sugar, and flour, and mix with a dough hook.
  4. While continuing the mix, gradually add the olive oil.
  5. Knead with the dough hook for about 5 minutes.
  6. Spray a bowl with cooking spray, and add the dough to the bowl.
  7. Cover with a towel, and allow to rise for 60-90 minutes.
  8. Preparing the Stromboli
  9. Preheat oven to 450, and spray cooking spray on a baking or pizza sheet.
  10. Prepare a working space by sprinkling flour on it.
  11. Pinch off a large ball of the dough, and roll out into a rectangle.
  12. Spread a layer of the pizza sauce on the dough, concentrating it in the center and spreading out but not too close to the outside edges since you will be rolling those over.
  13. Add the hamburger meat and pepperonis.
  14. Cover with cheese. I used a pizza cheese mix, but any cheese would work.
  15. To roll, I took both sides and just clamped them together, while pinching the sides together all the way down. Once it was closed, I rolled it down and folded the sides.
  16. Bake for about 15-20 minutes, checking to make sure that the top is not too brown. If the top is getting too brown, but you do not feel like it is ready, you can cover it loosely with foil and cook another few minutes.
  17. Remove from the oven.
  18. Brush it all over with the melted butter, and sprinkle lightly with the kosher salt.
  19. Cut into slices and serve with pizza sauce and/or ranch dressing for a dipping sauce.
