Summer Cooking – Recipe: Beef, Portobello, and Grilled Onion Sliders

I have not been posting as many new recipes this summer.

For the first month, I was in school and spending every spare second either studying or entertaining three precious littles.

Now that I have school marked off my list, I can continue with our summer fun list and start cooking up fun, new food again.

Yesterday was one of those days where I looked in my refrigerator and pantry and decided that I wanted to create something.  Since I had slider buns, I decided to start there.

What I ended up with was a delicious slider burger, complete with portobello mushrooms, onions, and cheddar cheese.  It brought some sunshine into the kitchen on our lazy, rainy summer day.

Beef, Portobello, and Grilled Onion Sliders

Ingredients

2 pounds ground beef

1 tablespoon worcestershire sauce

1 teaspoon pepper sauce

1/2 cup shredded cheddar cheese

2 teaspoons seasoned salt

1 teaspoon ground black pepper

3 tablespoons butter

1 onion, diced or cut into rings (I did both)

1 portobello mushroom, diced

2-3 tablespoons beef broth

Instructions

    Preparing the Beef
  1. Add the ground beef, worcestershire sauce, pepper sauce, cheese, 1 teaspoon seasoned salt, and pepper to a bowl.
  2. Mix together using clean hands.
  3. Form into small, roundish hamburger patties, the size of a slider roll.
  4. Heat skillet over medium heat.
  5. Add the hamburger patties to the pan.
  6. Cook on each side for about 7 minutes, browned on both sides.
  7. Remove from pan and drain on a paper-towel lined plate.
  8. Drain the grease but do not clean the pan.
  9. Add the butter to the pan and leave on medium heat.
  10. Add the onions and 1 teaspoon seasoned salt and cook for 2-3 minutes.
  11. Add in the portobello mushrooms and continue to cook for another 2-3 minutes.
  12. Place the hamburger patties back in the pan, pour in the beef broth, and reduce the heat to low.
  13. Cook for another 10 minutes, allowing the juices to soak into the hamburger meat.
  14. Preparing the Sliders
  15. Set the oven to low broil.
  16. Spread Lia Marie's garlic spread on both sides of the slider buns.
  17. Broil for about 2 minutes, keeping a careful eye on the buns so that they do not burn.
  18. Add a hamburger patty, grilled onions, and portobello mushrooms to each of the slider rolls.
  19. Serve with your choice of condiments and toppings.

Summer Fun: Eat Spaghetti and Meatballs while Watching Lady and the Tramp – Recipe: Spaghetti and Meatballs

One of the things that I saw on someone else’s (sorry, I cannot remember whose!) summer fun list was to watch Lady and the Tramp while eating spaghetti and meatballs.  What a great idea!  Given how much we love pizza and movie night, I new that adapting it to movie and spaghetti and meatballs night would be perfect. So, on Monday, that is exactly what we did.

We ate the spaghetti and meatballs picnic style on the floor, while watching a truly adorable movie. Everyone loved it.

Spaghetti and Meatballs

Spaghetti and Meatballs

Ingredients

Meatballs

2 pounds ground beef

1 egg

1 cup bread crumbs

1/2 cup parmesan cheese

1 teaspoon salt

1 teaspoon ground pepper

1 teaspoon onion powder

2 teaspoons Italian seasoning

1 tablespoon olive oil

Sauce

28 ounce can tomato sauce

6 ounce can tomato paste

2 gloves garlic, minced

1 teaspoon salt (or more, to taste)

1 teaspoon pepper (or more, to taste)

2 teaspoons Italian seasoning

1 teaspoon sugar

1 teaspoon onion powder

*Note - adjust seasoning according to taste preference

Instructions

    Meatballs
  1. Add the hamburger meat to a large bowl.
  2. Pour in the eggs, bread crumbs, parmesan cheese, and all seasonings.
  3. Using your clean hands or a spoon, mix together.
  4. Form into 2 inch balls.
  5. Add olive oil to a large cooking pan, and heat over medium to medium high heat.
  6. Once the burner is hot, add the meatballs to the pan.
  7. Cook for about 5 minutes, and then turn.
  8. Cook for another 5 minutes or until no longer pink. *Note - the cooking time might be more or less, depending on your stove, how comfortable you are with the cooking time of your beef, etc.
  9. Sauce
  10. Leave the meatballs in the pan and reduce the heat to medium low.
  11. Add the tomato sauce and tomato paste to the pan and mix it together.
  12. Add the garlic and all of the seasonings.
  13. Cook over low heat for at least 15 minutes.
  14. Serve over cooked spaghetti.

A Crafty Birthday Party – Recipe: Asian Meatballs

As I have mentioned before, I am not very crafty.  I try, but things do not always turn out as pretty for me as they do in the pictures.

But, because of Pinterest, I am trying to put together a handmade party for my sweet oldest boy, who is turning 9 this week.  He loves to read, so we are having him a Book-Themed party.  I knew what I wanted to do, and Pinterest answered the call.

I will let you know how it all turns out.

While trying new things is definitely good, sometimes it is nice to know in advance how something will turn out.  Last week when my sister requested Asian meatballs for her birthday, I knew exactly what she wanted.  I had made these Game Day Meatballs by Dine & Dish for her three years ago.  They were delicious then, and I knew that they would be perfect again.  And, we were not disappointed.  We did not have a single meatball leftover.

Asian Meatballs

Ingredients

2 pounds ground beef

1 cup dry bread crumbs

3/4 cup milk

2 eggs

2 teaspoon Kosher salt

1 tablespoon oil

3 cloves garlic

1 1/2 cup ketchup

1 cup honey

1/2 cup soy sauce

Instructions

  1. Preheat oven to 450 degrees.
  2. Put meat in a bowl and break it up. Add in the bread crumbs, milk, eggs, and salt, and blend it together with your hands.
  3. Shape meat mixture into one inch balls.
  4. Place in a single layer on a jelly roll pan and bake about 10-12 minutes.
  5. Remove from oven, and drain any extra grease off the meatballs.
  6. Add oil to saucepan and sauté garlic until soft.
  7. Add the ketchup, honey, brown sugar and soy sauce.
  8. Bring to boil, stirring constantly.
  9. Reduce heat, cover and simmer about ten minutes.
  10. Add the meatballs to your sauce bring back to a boil and simmer uncovered for about 5 minutes, until sauce glazes meatballs.
  11. Serve over/with rice.
