The boys came home early yesterday because it was an early release day.
Gabriel has a cold, and he feels just awful. Not bad enough to stay at home but really not well enough to be at school. So, a half day was perfect timing.
We did what comes natural on a cold, wet, under the weather kind of day. We snuggled in bed.
And, I made cookies. Food does not taste right when you have a cold. But, cookies always taste good. I looked in my pantry to see what all I had for a special cookie. I found chocolate chips, Reese’s peanut butter cookies, and a few Oreos. Not wanting to leave any of those delicious treats out of the cookie, I decided to use them all. The result was fantastic.
Ingredients
- 1 cup butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup chocolate chips
- 6 Oreos, crushed
- 3 Reese's Peanut Butter cups, chopped
Instructions
- Preheat oven to 350.
- Prepare baking sheet by lining it with parchment paper.
- Mix together the butter and sugars.
- Add the eggs and vanilla, and continue to mix until creamy.
- In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
- Slowly add the flour mixture to the creamy mixture.
- Mix until everything is incorporated.
- Gently fold in the Oreos, chocolate chips, and peanut butter cups.
- Using a cookie scoop, place by scoops onto the baking sheet.
- Bake for 10-12 minutes. The cookie will appear slightly undercooked, but it will firm up while you allow them to cool on the cookie sheet for about 10 minutes before moving them to a wire cooking rack.
