Simple Pleasures – Recipe: Mini Caramel Apples

I am all about the little things….because little things often add up to one big giant thing.  It is the little things in life that often bring about the greatest pleasure.  It is those things, often unplanned, that frequently create the best memories.

As I sit here typing, Sean is outside playing football with all of the kids.  I cannot see what they are doing, but I can hear the laughter.  And, because I can hear the laughter, I can actually picture their faces – complete, utter happiness that their papa was home after school to play football with them.  See…such a little thing that created a big smile for my kids, which, in turn, created a big smile for me.  Now Sean is back inside struggling to breathe…because….he has now been hit hard with allergies, too.   But, he did not let that stop him from playing a little game of football because he knows that those are the things that the kids will remember.  Those are the little things that they (and their momma) will play in their heads tonight as they fall asleep to peaceful dreams.

When I see recipes that are for mini things, I can hardly contain my excitement.  Because I know that good things come in small packages.  And, these mini caramel apples did not fail to disappoint my love of small things.  They are cute and can be eaten in one bite.

Recipe: Mini Caramel Apples


3-4 apples

1 package caramels

2 tablespoons of water

sprinkles, optional

lollipop sticks


  1. Peel the apple, and, using a melon scooper, scoop out balls. I got about 5-6 balls per apple.
  2. Add the caramels and water to a small pan. Heat over medium heat, stirring constantly, until the caramel is melted.
  3. Place the apple balls onto lollipop sticks, and dip the apples into the caramel, coating generously. Roll in the sprinkles or chocolate chips. Place the sticks in a a styrofoam block while you dip the remaining apples.
  4. Place in the refrigerator for about 1 hour to allow the caramel to set.

I will say that they did not turn out as pretty as I had hoped because the caramel does not stick very well to an apple once the skin has been removed.  I read that it works better if you dip the apple in chocolate or peanut butter first to create a layer around the apple. The next time, oh, and there will definitely be a next time, I will try that little trick.  But, for today, these worked just fine.  I had happy littles, so my mission was accomplished.

      They were delicious. Now I have to make them again to make them look as good as they tasted. Actually, if I coat them with chocolate and then caramel, they will probably taste even better! 🙂
